....So. Ingredients, (well what i used, but you could change anything to your own personal taste)....
....Plus, i like to keep my veggie ingredients large and chunky......and i tend to make a huge amount and then freeze what i don't use for another time....
...Also a good way of using up left over veggies....
....I used....
A red onion (sliced)
An Aubergine (egg plant) (chopped big)
Courgette ( also chopped big)
Some mushrooms (sliced in half)
A big handful of cherry tomatoes sliced in half
...The other stuff....
I teaspoon of 'Biryani mix' if you have it...
....when i am in London i like to stock up with all sorts of Indian spices, and these i get from an Indian supermarket, but if you cant get your hands on this, here is a close up picture of the ingredients...
..All the usual things....Cassia ( this is cinnamon ), black pepper, cardamom, chillies,cloves,caraway,mace....
1 tablespoon of Rogan josh paste
1- 2 teaspoons of sugar (depending on how you like things sweetish)
A carton of brown lentils
Some cooked Quinoa
Plus a good handful of spinach leaves
And about half to a cup of coconut milk (the coconut milk i used is the one that you can put in your tea or on your cereal, not the calorific sort of coconut (unless off course you want too)...
So start by frying your onion, then add the other veggies ( not the spinach leaves) add the paste and biryani mix, add some water (just under half a pint, you can see in the photo how liquidy mine is)...
Add the lentils, mix it all together, turn to simmer and leave for ages, i think i left mine for about an hour to cook away gently until its all nice and soft and the tomatoes are squished down...
Then add in your Quinoa, however much you like and again cook just for a while, then mix in your spinach leaves
....Mega easy....really yummy....and super healthy.....
....Also good with Butternut squash, as this adds a little more sweetness....

OOh making my mouth water! It's always interesting to see other peoples recipes, as there is often something new to try. For example, another friend suggested roasting cauliflower. It is so divine, I can't believe I never heard of it before!
